Picture Crazy!!

My husband bought me a new professional type camera with all the bells and whistles! Its such a beauty! All together the set was about $850 but he got a good deal on it. I kept bugging him to let me book photo shoots with our photographer but its gotten more and more expensive over the years with the added children ;) He decided buying me the equipment to do it myself would be cost effective. I totally don't know what I'm doing. I keep having to Google settings on the camera like aperture, ISO, etc. but its been so fun! Also it helps a ton that my models are gorgeous and could get a gorgeous photo with the cheapest camera out there. I've put all the edited pics up on Facebook but here are just some of my favorites. :)

Chicken Pot Pie Cupcakes

I got this recipe from pinterest and it was delicious!! I doubled the recipe because I have a big group of people eating and I added extra bacon :)

Chicken Pot Pie Cupcakes
Ingredients
  • 2 cups of cooked chicken breasts diced
  • 1 can cream of chicken soup
  • 1 cup frozen mixed veggies
  • 1 cup shredded cheddar cheese
  • 1/2 tablespoon of  dried thyme
  • 1/2 tablespoon of dried basil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic salt
  • 2 (10 oz) cans Pillsbury biscuits
Directions
  1. Preheat your oven to 400. In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices.
  1. Lightly grease a 12-cup muffin tin and place the Pillsbury biscuits into each cup, pressing into the bottom and up the sides.
  1. Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Check at the 12 minute mark.
  1. Let rest for about 3 minutes and dig in!

German Pancakes - Pop eye Pancakes

My best friend growing up had a big family and I pretty much ate over at there home any possible chance I got. Her mom was/is such an amazing cook! This recipe is something I remember as such a breakfast treat on mornings I had slept over. I got the recipe from her to be able to cook for the kids and I and of course everyone loves them! ALSO super easy to make!



German Pancakes—Pop-Eye Pancakes
Ingredients
6 eggs 1 cup flour 1 cup milk
½ tsp. salt

Combine all ingredients
and blend well in blender. Melt 6 tablespoons margarine in a 13X9 inch pan. Pour batter directly into hot pan and bake at 425 for approximately 18 minutes.
We like to add syrup!

Business Owners!

I'm so proud of my husband. About two years ago things were really rough financially and he decided to change career paths. He was born a natural salesman and was the best in any sales situation/job he had. He got burnt out though and the money was just not consistent for a growing family. He used up all his resources and extra time and energy to get his CDL and find a way into the oil field business. He slept in his car or semi truck. His food was very limited. He had LONG days and weeks with out breaks. He waited for pay. He climbed up and worked as hard as he could and sacrificed just about everything to provide for his family. We now finally live all together under the same roof up north. We get to see him every single night. I have the amazing blessing of getting to stay home with my kids. We don't have any debt. We have money in savings. Things are finally straight and in order and stress is no where near where it used to be. He also now has the opportunity to buy his own semi trucks to become his own company driver which TRIPLES our income monthly. My dad and him are making plans to down the road have 3-5 trucks running which brings in numbers that I cant even wrap my head around. I don't know where I'd be with out him and my kids and I cant thank God enough for everything he has done for us. God answers prayers.
